Cook - Opening Mama Shelter Mexico City

About the role

Mama Shelter is opening a new hotel in La Roma, Mexico City, and is hiring a cook. The position reports to the Sous Chef and Executive Chef or any other person authorised by management, and is responsible for preparing all food according to the Executive Chef's and restaurant standards.

Key responsibilities

• Prepare food, including portioning, chopping and storing ingredients before use
• Weigh, measure and mix ingredients according to recipes or personal judgement using kitchen equipment
• Wash and peel fresh fruit and vegetables when needed
• Cook food according to recipes and serve dishes such as soups, desserts, sides and main courses in proper portions and presentation
• Ensure food is portioned, arranged and decorated correctly for servers and guests
• Keep storage areas clean and prepare potentially hazardous foods at the right temperature
• Follow personal hygiene procedures so that served food is safe
• Check the quality of food and report non-compliant products to management
• Monitor the temperature of appliances and food with thermometers and thermostats, including freezing systems, and report faults to facilities management
• Report maintenance issues immediately to the appropriate staff and perform other reasonable tasks assigned by the supervisor

Required profile

• Proven experience preparing Italian speciality food
• Experience in European-style restaurants preferred
• 2-3 years in the hospitality sector
• Knowledge of quality standards and hygiene
• Based in Mexico City with no mobility issues
