Director of Food & Beverage

About the role

The Director of Food & Beverage will lead the full luxury F&B program for the upcoming Omni Pontoque Resort, overseeing five to six outlets including signature restaurants, a beach club/pool bar, lounges, banquet operations, and in‑room dining. Reporting to the General Manager and senior leadership, the role will shape strategy from pre‑opening through launch, ensuring an exceptional guest experience aligned with the resort’s brand and financial goals.

Key responsibilities

• Develop and execute a strategic F&B plan that supports overall resort objectives.
• Lead budgeting, financial forecasting, and cost‑control initiatives to meet or exceed profit targets.
• Analyze performance metrics, identify revenue opportunities, and adjust pricing and menu engineering to optimize margins.
• Ensure all outlets deliver Forbes Five‑Star and luxury service standards, maintaining brand compliance and guest satisfaction.
• Oversee health department inspections, SOP development, and crisis management preparations, including hurricane readiness.
• Collaborate with the General Manager, Director of Operations, and executive team on innovation, revenue growth, and operational excellence.

Required profile

• Proven senior leadership experience in luxury hotel or resort food and beverage operations.
• Strong financial acumen with a track record of budgeting, forecasting, and profit‑and‑loss management.
• Demonstrated ability to drive revenue growth through menu development, pricing strategy, and market analysis.
• Experience implementing high‑end service standards and managing large, multi‑outlet teams.
• Excellent communication and collaboration skills to work with cross‑functional senior leadership.
