Director of Purchasing – Luxury Resort Pre‑Opening

About the role

The Director of Purchasing will lead all food, beverage, and general procurement activities for the upcoming Omni Pontoque Resort in Punta de Mita. This senior position is critical during the pre‑opening phase, ensuring that the resort launches with optimal inventory, supplier relationships, and cost‑effective purchasing strategies.

Key responsibilities

• Develop and execute pre‑opening procurement schedules and critical path milestones.
• Manage OS&E purchasing, delivery, receiving, storage, installation, and turnover.
• Plan opening inventory levels and establish initial par‑levels for all outlets.
• Onboard suppliers, ensure operational readiness, and resolve punch‑list issues such as shortages or late deliveries.
• Coordinate closely with Culinary and Catering teams to align menu requirements with inventory and purchasing plans.
• Attend Food & Beverage meetings, forecast sessions, and financial reviews to align purchasing with budget targets.
• Explore regional procurement options for cost savings while maintaining brand standards.
• Collaborate with corporate purchasing offices on quarterly and annual order requirements.
• Leverage Omni rebate and incentive programs to maximize financial results.

Required profile

• Proven experience in hospitality procurement, preferably in a pre‑opening or large‑scale resort environment.
• Strong leadership skills with the ability to supervise purchasing and receiving staff.
• Excellent communication and negotiation abilities with suppliers and internal departments.
• Detail‑oriented mindset for inventory planning, supplier onboarding, and punch‑list resolution.
